Polenysian Pile Up {Bombay Dinner} Recipe

Polynesian Pile-Up is one of my all time favorite dinners. It’s a great dinner for everyone since it’s Chicken and Rice with pick your own toppings!

Ingredients for Creamy Chicken:

  • 1 Rotisserie Chicken (or about 2 pounds of Chicken Thighs or Breasts) chopped or shredded into desired size
  • 1/4 chopped onion
  • 6 Tbsp Butter
  • 6 Tbsp Flour
  • 1 1/2 t. curry powder
  • 1/2. ginger
  • 1 1/4 t. salt
  • 1 cup chicken broth
  • 2 cups milk


  1. Saute Onion and butter.
  2. Add Flour, Curry, Ginger and Salt to make a thick rue.
  3. Add Chicken broth and Milk. Slowly mix together until mixture thickens.
  4. Add Chicken and mix. Continue stirring  until Chicken is heated through
    ** Can be transferred to crock pot to keep warm for later as well.

Serve Creamy Curried Chicken over White or Brown Rice.

Top Rice and Chicken with any or all of the following {My favorites first}:

  • Crunchy Chinese Noddles
  • Green Onions (chopped)
  • Chopped Tomatoes
  • Grated Cheddar Cheese
  • Pineapple Chunks
  • Toasted Coconut
  • Slivered Almonds
  • Riasens
  • Chopped Celery
