You know those days when you really don’t want to cook? Nothing sounds THAT inspiring? and you’ve had pasta 2xs & bean quesadillas already this week (our fall backs)?? That’s what I was feeling like…
I wasn’t able to find the Hawaiian BBQ Sauce for the Hawaiian BBQ Chicken and Rice I was planning. But it was gloomy outside and I’d already made chocolate sweet rolls & bacon for 2 hours this morning. I
wanted… needed something fairly easy for dinner. And thus began my newest endeavor: Freezer Stir Fry
- 3-4 boneless skinless chicken breasts
- 1 jar of Trader Joes Tsao Stir Fry Sauce
- 1 can pineapple chunks
- 1 bag frozen (or fresh) veggies
Cook Chicken, Pineapple and half a jar of Tsao Sauce on low 3-4 hours in crock-pot. When finished, shred chicken and set aside. Cook a bag of frozen (or fresh!) veggies until tender (I used a frozen organic carrot, broccoli, cauliflower blend). Once warmed, add shredded chicken and pineapple chunks. Pour rest of Taso Sauce onto chicken and veggies, stir and continue heating!
I served mine over garlic rice tonight. Easy and fast! Big hit with the family!
